Sheet Pan Sausage & Veggies

Sheet pan meals are one of the easiest meals to make and a great way to clean out the refrigerator of all the odds and ends leftover from other recipes. It takes about ten minutes upfront for prep and then it goes in the oven and you have your hands free for the next 30-45 minutes. Mix and match vegetables, protein choices and spices and the options are endless. This is a recent favorite in our healthy kitchen.
What you'll need:
1 13oz Smoked Turkey Sausage 1 Medium/Large Zucchini 1 Green Bell Pepper 1 C Sliced Mushrooms 1 C Broccoli
2 Tbsp Oil 2 Tsp Garlic Powder 2 Tbsp (or less, I just eyeballed it) Mediterranean seasoning Juice from 1/2 lemon 1/3 C Shredded Parmesan Cheese (optional)
How to prepare: Cut everything into bite-sized pieces, toss into a bowl with all of the seasonings except the cheese and bake at 400F for about 35-45 minutes. Remove from the oven and top with the Parmesan cheese and serve. (Optional, serve with a side of quinoa, but really not necessary)
