Bell Pepper Nachos

Family nacho night. What could be better? Unless you find yourself going low carb, or grain free, keto etc. Now low carb is no longer an excuse to not to join in with the family. Bell Pepper nachos are easy, natural, absolutely delicious and guilt free! All the goodness of nachos with the satisfaction of low carb and all your veggies. My husband and I find we fight over the last bite!

What you'll need:
1/2 Large Bell Pepper (Red, Yellow, Orange work best in my opinion)
1/3 C Ground Turkey Taco Meat (If you need a recipe for the seasoning, try this one from my blog: Turkey Taco Seasoning)
1/4 C Grated Cheddar Cheese
Any Fresh Healthy Toppings You Like:
Lettuce
Diced Roma Tomato
Jalapeños
Onion
Avocado/Guacamole
Salsa
Greek Yogurt
How To Prepare:
Preheat your oven to 375F. Cut the bell pepper into large scoop sized pieces. Lay them onto a cookie sheet covered in parchment paper and roast for 15 minutes until they start to become aromatic. Pull them out and add any of the items you wish to be cooked onto the nachos - meat, cheese, tomato are my favorites to add at this point. Return them to the oven for another 10-15 minutes until the cheese is melted and the meat is heated through. Top with the rest of your favorite toppings and enjoy!
