Keto Pigs In Blankets
This recipe came out of necessity for a snack and quickly turned into a crowd favorite. It took me multiple rounds with the biscuit dough to get the keto biscuits to rise correctly, and another round to remember to add all of the ingredients on the list. I went to make the biscuits one day and realized I had this turkey rope sausage in my fridge that needed to be used. Bright Idea! Why not make keto pigs in blankets?!
So I did. And they were great. Now you can make them too!

Keto Pigs in Blankets:
1.5 C Almond Flour
2 Eggs
1/8 tsp Salt
4 Tbsp Melted Butter
1/3 C Fat Free Greek Yogurt
(You can use sour cream, but I like to add more protein rather than more fats)
1 Tbsp Baking Powder
1/3 C Shredded Cheese
1/2 tsp Garlic Powder
1 13oz Hillshire Farm Turkey Smoked Sausage
How to Prepare:
Preheat the oven to 400F.
Mix the eggs, baking powder, salt, butter, garlic powder. Then add the cheese. Finally, add the almond flour.
Refrigerate the dough for about 15 minutes to allow it to set. This makes it more manageable and allows it to raise better when baking.
While the dough is refrigerating open the smoked sausage. Cut into 5 pieces and cut lengthwise so you have 10 pieces.
Divide the dough into 10 pieces and wrap around the sausage pieces. Lay on a baking sheet and bake for 12-15 minutes, until they are golden brown.
Remove from the oven. Let them cool and serve!
