Easy Low Carb Chicken Bake
Have a spaghetti squash on hand? Have a half of a rotisserie chicken and want more than chicken breast for dinner (again)? Mixing protein and plants has become a specialty in my kitchen and this recipe is no different. This recipe was the brain child of working with what I had on hand and quickly became a family favorite!

What you'll need:
1/2 Rotisserie Chicken - Shredded
1/2 Spaghetti Squash - Baked and shredded
3 C Spinach - Roughly Chopped
1/2 C Shredded Mozzarella
1/4 C Shredded Parmesan
1 Tbsp Olive Oil
1 tsp Garlic Powder
1 tsp Italian Seasoning.
Pepper to taste
1 C Chopped Mushrooms (Optional)
How to prepare:
Preheat the oven to 375 degrees Fahrenheit.
Combine all of the veggies and chicken in a large bowl. Add the olive oil and seasonings and toss evenly.
Add cheese and mix well. Add to a 8x8 or 9x9 pan and bake for 30 minutes or until cooked through and the cheese is all melted.
