Cauliflower Rice Pilaf



I love having rice with dinner but couldn't quite figure out the right combination to fit my meal plan. I don't often eat starches or grains in the evening and none of the veggie rice options were cutting it.  It was very convenient when my local super market started selling frozen cauliflower rice, but to be honest, I quickly tired of the flavor of cauliflower with every meal.

This quick side dish is the solution to this dilemma. Takes about 10 minutes. Quickly make it from microwavable cauliflower that is already riced so it saves mess in the kitchen. Ready to give it a shot?

I use this recipe as a side dish for any meal and also as the rice base for my Chicken Fried Rice.


What You'll Need:

1 Bag of Frozen Riced Cauliflower

1/2 Medium Onion - Chopped

1 tsp Minced Garlic

1 tsp Coconut or Avocado Oil

Salt & Pepper to Taste

How to Prepare:

Microwave the cauliflower rice for 1/2 of the time recommended on the bag (mine is about 3 minutes).

Heat your oil over medium until it coats the bottom of the pan well and add the onion. Cook the onion until it starts to become translucent. Add the garlic and continue to cook until the garlic is fragrant. 

Add the cauliflower rice to the pan and increase the heat to medium-high. 

Cook the mixture for about 10 minutes stirring frequently. You want the rice to start to brown a little, not get mushy. Cook until the moisture is gone. Can be served immediately.
