Low Carb Chocolate Chip Cookies

The perfect chocolate chip cookie recipe is essential in any kitchen. I definitely have my traditional recipe perfected, but I struggled a little longer to find the perfect recipe when I'm trying to stay on plan. Depending on your use of sweeteners and chocolate chips this one is either low-sugar or sugar- free and also gluten free, using almond flour and flax in place of traditional flour. What you'll need:

1 Egg

1 1/3 C Blanched Almond Flour

1 Tbsp Flax Seed Meal

1/3 C Sweetener of choice

1/4 C Butter - softened

1/2 tsp Baking Powder

1 tsp Vanilla Extract

1/8 tsp Salt

2/3 C Dark Chocolate Chips

How to prepare:

Preheat the oven to 375F.

Mix the almond flour, flax seed and baking powder in one bowl.

In a separate bowl mix the egg, butter, vanilla, salt and sweetener together in a separate bowl.

Mix together and add the chocolate chips. If the batter is sticky put it into the refrigerator for 15-30 minutes to allow it to set (this allows them to keep proper shape when baking).

Divide into 10 cookies and bake for 12-15 minutes, until the cookies are golden brown.
