Low Carb Almond Flour Biscuits

I don’t often eat bread, but sometimes biscuits sound great with chili, biscuits and gravy, or simply as a snack. Working low carb, but not keto, it was difficult to find a recipe that didn’t over-do it on unnecessary fats. This almond flour-based recipe is now a staple in our kitchen, plus the bonus ingredients make them cheesy garlic biscuits that are a rave at any party.

What you will need:
1 ½ C Blanched Almond Flour
2 Tbsp Butter
2 eggs
1 Tbsp Baking Powder
2 Tbsp Ground Flax Seed
1/3 C Fat-Free Greek Yogurt
¼ tsp Salt
To make garlic cheese biscuits add:
2 Tbsp Butter
½ tsp Garlic Powder
1/3 C Shredded Cheddar Cheese
2 tsp dried parsley
How to prepare:
Mix Greek yogurt, melted butter and eggs together. Next add the baking powder, flaxseed, and salt. Lastly, add in the almond flour and mix until a dough forms. The mixture will be sticky. It is best to put this dough in the refrigerator for at least 15 minutes to help the biscuits rise properly while they bake.
Preheat the oven to 400F. Drop biscuits onto a baking sheet and bake for 12 minutes or until golden brown.
*The biscuits are still quite moist so are best stored in a sealed container in the refrigerator.
