Paleo Breakfast Hash

Let me start by saying I love breakfast. A good hearty breakfast with the family on Saturday morning is the perfect way to start the weekend. This recipe specifically is easy because it is so versatile. It can be made with any vegetables or meats you have left over in the fridge from the week and it tastes amazing each time. This time I'm using roasted sweet potatoes, spinach, breakfast sausage and when I can, mushrooms. Yum!

What you will need:

2 Eggs

1/2 C Seasoned roasted sweet potatoes

1 C Spinach - Sliced

1/3 C Ground turkey breakfast sausage (already cooked)

1/2 small or 1/4 large avocado

1/2 C sliced mushrooms (optional)


How to prepare:

Cook the sweet potatoes, spinach, and sausage on medium heat until heated through and the spinach is done. Crack the eggs over the top and cover until they reach over-easy to over-hard, whichever you prefer. Serve with sliced avocado and a little hot sauce.
